Our dog (not a service dog, but we did invest a lot in her training) was also very well-adjusted to dogs, until she had a negative incident with an older, much larger dog. Ever since then, she's not quite as innocent and trusting as she used to be, and she's consistently nervous around bigger dogs. This is one of the things that is hardest to “train out” of a dog.

If everything she's writing is true, she really doesn't have anything to worry about. Yes, it will be a lengthy and tiring process to drag this to court, but if they really have no grounds for trying to evict her, she's going to get a huge payout.
