This has to be one of the strangest requests from your future in-laws. One, it's not their wedding, and eye color is a critical part of someone's appearance! It's identifying and personal. Your wedding day is especially the day that someone should want to feel the most themselves and comfortable in their own skin.

The crazy part is that her eyes are blue-grey, which is usually a desired color. Obviously, beauty is in the eyes of the beholder, but blue eyes are definitely revered. Brown eyes aren't talked about as if they're a beautiful trait, and it's usually not an eye color that gets attention or compliments. It's very strange.
