The caterer at a wedding is possibly the most important vendor the happy couple has to choose, mainly because it is the one thing guests care about the most, and talk about the most after the wedding.
As a wedding veteran myself, and a vegetarian, all people care to compliment me about my wedding is the food. So guests must leave your venue content and on a full stomach. It was also important to me that I would actually have something to eat at my own wedding, so I made sure a vegetarian option, and a good one, would be given to me on my wedding day.
No one should settle on these kinds of things on their wedding day, it's a shame the bride here was forced to.
