Having a dietary restriction or an allergy is neither fun nor games. It's serious biz, and people can be weirdly annoying about it especially when it comes to having a gluten allergy. Somewhere along the line, gluten-free became shorthand for high maintenance, so people treat it with a weird amount of disdain.
But celiac disease is as real as it gets, and it's not a choice. It's not a choice to have to pay so much extra for gluten-free pizza crust. It's not a choice to be constantly disappointed by how small gluten-free bread is, let alone having to keep everything in the freezer. It's not a choice to be nervous every time you go to a restaurant and have to give a whole speech to everyone who takes your order. But at least we can come together over these memes, which bond us together in a way that wheat never could.
