Even if you don't get into super deep conversation with someone on Hinge, Bumble, or Tinder, you at least get an idea if you actually want to meet them. Small talk can tell you a surprisingly large amount about someone, and their response to innocuous comments can be a huge red flag before you are even in the same room as them.
